Happy Green Cows is an amazing restaurant incepted by 2 guys, Stefan and Theodore, whose association proved incredibly successful and gave birth to this unique creation, almost a masterpiece.

Theodore is the mystical waiter while Stefan is the rational chef. From Theodore, the Happy Green Cows got an air of “cult restaurant”.

Stefan, who I know had a scientific background, might well be into molecular gastronomy, judging to his creative dishes made out of unexpected ingredients.

Dining at the Happy Green Cows is every time a renewed experience, a new discovery of sensual tastes.

Often you will have trouble to guess what are the ingredients in Stefan's delicious dishes or, the other way round, you will be astonished by the delicate tastes that he’s able to extract from ingredients you thought you knew everything about them.

An ancient Greek philosopher once recommended that we “eat for living” instead of “live for eating”.

Regardless of the philosophy to which you subscribe, Paros will definitely cater to you! However, you should be aware that in modern Greece as well as the entire Mediterranean, eating is almost a ritual. One of the main characteristics of this ceremony is that instead of having your own dish in front of you, the table is filled with a variety of little plates (called mezze) that you share with your party.
